Peanut Pancake Turnover [Apam Balik], Street Food 2020


Street Food -Kuala Lumpur: 
Peanut Pancake Turnover (Apam Balik) in simple means turnover pancake originated from China.
It is sold in many varieties at specialist roadside stalls, morning street markets or night markets.

The pancake’s batter is made from a mixture of flour, eggs, sugar, baking soda, coconut milk and water. Other ingredients are sprinkled as fling crushed peanut granules with sugar and sweet corn kernels (available from cans).

The batter is cooked upon a thick round iron frying pan in plenty of palm margarine to avoid sticking to the pan. Then the pancake is folded (hence the name “turnover pancake”) and cut into several pieces.

It can be created other types of pancake associated with this style, namely Martabak Bangka, Sweet Martabak (with chocolate), Hoklopan, Martabak Mini and Thin Apam Balik.

Youtiao / Yau Char Kway

‘Youtiao’ is a long golden brown deep fried strip of dough. Conventionally, youtiao are lightly salted and made so they can be torn lengthwise in ‘’TWO’’.

‘Youtiao’ are commonly eaten at breakfast as an accompaniment for rice congee, soy milk or regular milk blended with sugar. It is also normally served with with Bak kut teh sliced thinly to be dipped into the broth/congee and eaten.

In Malaysia, we called it ‘Yau Char Kway’ and widely sold in morning street markets or night markets.

Youtiao known elsewhere as Chinese cruller, Chinese fried churro, Chinese Oil Stick, Chinese Doughnut, Chinese Breadstick and Fried Breadstick.
